Tere, kas kellelgi on soovitada head India köögi kokaraamatut? Ehk karrid jm selline. Amazonis on neid palju, aga millist osta tasuks, ei oska küll aimata...
Mida te Kärdile soovitate, kallid naminamikad?
Usun et nii mõnigi siinne soovitaks 50 imelist India karrit (50 great curries of India), sellest on karriteemas (üks kooskokkamine oli kord) ka juttu. Olen mõnda veel sirvinud, aga midagi on eriti head selles raamatus. Seal on erinevaid karrilisi ja ka lisandite ja leibade jms retsepte.

Ma ise ei ole india toidu fänn, aga silma on hakanud, et kui sellist korralikku "piiblit" tahta, siis näiteks Pushpesh Pant "India: The Cookbook". See on nagu Silver Spoon itaalia köögi kohta.

Maddhur Jaffrey retseptist inspireeritud peedi-tomati-vürtsköömneroog. Väga mõnus peedikarri, selline magushapukas: Lisan siia veel mõned india peedikarri retseptid, mida millagi ehk proovida sooviks. Esimesed kaks on Maddhur Jaffrey omad: BEETROOT WITH ONIONS (SHORVEDAR CHUKANDER) 350g raw beetroot (without stems/leaves) 4 tbs veg oil 1 tsp whole cumin seed 1 clove garlic finely chopped 100g onion peeled & coarsely chopped 1 tsp plain flour 1/8th to 1/2 tsp cayenne pepper 225g tomatoes peeled & finely chopped 1 tsp salt 1/2 pint water Peel beetroot and cut into wedges (e.g a medium beetroot 5cm long into 6 wedges). Heat oil over mediim flame, sizzle cumin for 5 secs add garlic and stir fry, then add onion and stir fry for 2 mins. Add flour and cayenne and fry for another minute. Then add tomatoes, beetroot, salt and water - bring to simmer, cover, turn heat to low and simmer for 30 mins or until beetroot are tender. Remove lid, return heat to medium, and cook uncovered for 7 mins, or until sauce has thickened slightly. (Dish can be made ahead and then reheated) BEETROOT STEWED WITH TOMATOES 1 kg beetroot (peeled & cut into 2cm dice) 750g ripe tomatoes (peeled & finely chopped) 3 tbs veg oil 1 tsp whole cumin seed 1 dried hot red pepper 1 tsp ground turmeric 1 tsp salt one sixteenth tsp ground asafetida (!!) Heat the oil over medium-high flame. Put in asafetida & 2 seconds later the cumin & red pepper. Stir once and then add turmeric. Stir once again and add tomatoes. Cover pot immediately and keep covered until loud sizzling subsides. Add beetroot and salt, bring to simmer - cover, lower heat and simmer for an hour or until beetroot is tender. Because this is a 'wet' dish it is best served in small individual bowls A recipe from India Cookbook by Pushpesh Pant 2 cloves pinch of asafoetida 1/2 tsp ground cumin 1/2 tsp fenugreek seeds about 6 beetroots cut into small chunks 1/2 tsp ground ginger 1 tsp ground coriander 1/2 tsp chilli powder 2 small tomatoes chopped Heat a tablespoon of oil in a pan, add the cloves, asafoetida, cumin and fenugreek and fry for a minute, add the beetroot then pour in 250ml water, bring to the boil then lower the heat and simmer til the beetroot is cooked. Add the remaining spices, tomatoes and salt to taste and cook for a further 10mins. I needed to add a splash more water with the spices. )This was delicious, the combination of the sweetness of the beetroot and the heat from the curry spices, made a lovely colourful addition to the cabbage masala, dal and curried aubergine we had with it.) Beetroot with Beetroot Greens (Julie Sahni) 1 large bunch beetroot, with leaves ( about 1kg)* 5 tbsps peanut oil 1 tsp black mustard seeds 1 Tbsp ground coriander 1/2 tsp fenugreek seeds 1/2 tsp turmeric 1/2 tsp cayenne 2 medium onions, minced 1 Tbsp grated ginger 1 tsp salt, or to taste 1 tsp roasted cumin seeds, crushed Remove the leaves from the stems and discard the stems. Chop the leaves. Peel the beetroot and slice into 1/8th inch slices. Heat the oil and add the mustard seeds. When they begin to pop, add the next 4 ingredients, stir once, then add the onions. Fry the onions for about 6 minutes.Add the beetroot and the greens until the greens wilt. Now stir in the ginger, the salt and about a cup of water. Cover, and cook over low heat for about 20 minutes, until the beetroot is tender. Garnish with the crushed cumin seeds.
